Devon Sharpham Brie:
is a Coulommiers type cheese which has been hand-made at Sharpham, near
Totnes Devon since 1980. Salt, starters cultures and vegetarian rennet
are the only additions to fresh Jersey milk. 'Sharpham' has a unique
flavour and creamy texture.
Cornish Yarg: is
a delicious semi-hard cheese of milk from Friesian cows. It is
deliciously creamy under the rind and slightly crumbly in the core and
wrapped in nettle leaves. It has a young, fresh, slightly tangy taste
and is made by hand in open round vats. "Yarg" is simply "Gray" spelled
backwards, after Allan and Jenny Gray, the couple who gave the recipe
to Pengreep Farm in the 1970s.
Snowdonia Black bomber extra mature cheddar: made to a classic hand made recipe in Rhyl, Wales. Extra matured to give a real bite and creamy flavour.
Long Clawson Stilton: the
classic component of any cheese selection - one of only four dairies
licensed to make stilton. This Leicestershire producer is probably the
most famous. The best blue cheese in the world?
Celtic Promise: previous winner at the British cheese awards. A semi soft
cheese washed in cider to give distinctly grassy straw like flavours
with a hint of sweetness and a full tang. Made by John Savage in
Dyfed, West Wales.
Golden Cross goats cheese: moderately strong yet creamy texture with a nice bite. Made by the Golden Cross cheese company in East Sussex.
Served with biscuits, celery and apple and sultana chutney
